can anyone suggest any programs/synths/keyboards that would be exceptional in creating those old 94/95ish piano riffs?

depends on your budget. more money=better keyboard=better riffs
I'd probably try a Yamaha

i just use general midi for my piano sound,or if i'm at college i'd use a korg x5 synth module

You could find piano samples and arrange them in a program like acid or even eJay or something, then you just have to think of where they go!
